Tofu Stuffed with Pork in Tomato Sauce | Dau Hu Nhoi Thit Sot Ca Chua

Tofu Stuffed with Pork in Tomato Sauce is a savory Vietnamese dish featuring firm fried tofu filled with seasoned ground pork, simmered in a rich and tangy tomato sauce.

Ingredients 

Filling:

  • ½ lb ground pork
  • pinch kosher salt
  • pinch sugar
  • pinch black pepper
  • 1 Tbsp mushroom powder
  • 2 Tbsp shallots, chopped
  • 2 Tbsp dried wood ear mushroom, soaked in warm water for 15 minutes, then squeeze water out and chop
  • 1 Tbsp fish sauce

Ingredients:

  • 2 14 oz packages firm tofu , cut into 16 triangle shapes per block of tofu, deep fry
  • avocado oil, or any neutral oil to fry

Tomato sauce:

  • 1 Tbsp garlic, chopped
  • 2 Tbsp shallots, chopped
  • 5 medium Roma tomatoes, quartered
  • 1 Tbsp tomato paste
  • 1 Tbsp fish sauce
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 Tbsp sugar
  • 1 cup low sodium chicken broth

Thickener:

  • ¼ cup water
  • 1 Tbsp potato starch

Garnish:

  • cilantro, chopped
  • 1 stalk green onion, chopped

Instructions

  • Mix all the filling ingredients together and set aside to marinate.
  • To cut the tofu in triangular shapes, first cut each tofu block into 4 squares. Then cut each square diagonally across so it looks like a triangle. Fry and set aside to cool.
  • Once fried tofu has cooled, make a slit opening and stuff tofu with pork filling.
  • In a large saucepan, on medium high heat, add oil and fry up garlic and shallots for 1 minute.
  • Add tomatoes and the remainder of the ingredients, minus the chicken broth.
  • Add stuffed tofu, meat facing down.
  • Cook for a couple of minutes then flip tofu over and cook for an additional couple of minutes.
  • Add chicken broth and thickener mix.
  • Bring to a boil, then reduce to a medium simmer and cook for 20 minutes.
  • Flip stuffed tofu halfway through.
  • Garnish with chopped cilantro and green onions. Serve with rice.
