Soy Dipping Sauce

Ingredients 

  • 1 cup water
  • 2 cups organic coconut water
  • 1 cup white vinegar
  • 1 cup low sodium soy sauce
  • 1 cup sugar
  • ¼ cup lime juice with pulp
  • 2 limes, just their lime zest
  • 6 cloves garlic, chopped
  • ¼ cup Thai chili peppers, chopped
  • 1 Tbsp chili paste

Instructions

  • Boil water, coconut water, vinegar, low sodium soy sauce and sugar. Stir together and boil until sugar dissolves. Remove from heat.
  • Add lime juice, lime zest, garlic, chopped chili peppers and chili paste.

Notes

Good for a month in the fridge as long as you don’t double dip.
