A refreshing Mediterranean Tomato and Chickpea Salad, bursting with juicy tomatoes, hearty chickpeas, fresh herbs, and a zesty lemon dressing. Light, flavorful, and perfect for any meal!

Ingredients 

Dressing:

  • 1 tsp kosher salt
  • ¼ black pepper
  • ¼ cup extra virgin olive oil
  • 1 ½ whole lemon, juiced
  • ¼ cup ground sumac

Ingredients:

  • 2 cups Roma tomatoes, seeds removed, cut into 1/2 inch pieces
  • 2 cups Persian cucumbers, seeds removed, cut in half lengthwise then in to 1/2 inch thick slices
  • ¼ red onion, cut in half then thinly sliced, soak in ice cold water
  • ½ cup mint leaves, chopped
  • ½ can chickpeas/garbanzo beans (15.5 ounce can), drained and rinsed

Instructions

  • Soak sliced red onions in an ice cold water bath for 30 minutes then drain.
  • Add all dressing ingredients together and set aside.
  • Prepare the rest of the ingredients.
  • Mix all ingredients together in a bowl and toss thoroughly.
  • Tip:  Wait at least 15 mins before serving so flavors can infuse together.
