Stir Fried Bitter Melon and Eggs – Kho Qua Xao Trung

If you're a fan of bitter melon, you'll adore this quick and easy bitter melon stir fry with eggs—a delightful option for breakfast or a quick weeknight dinner.

Ingredients 

  • 2 bitter melons, cut in half lengthwise, remove seed then slice thin
  • 1 Tbsp kosher salt
  • 6 eggs, beaten
  • 2 green onions, chopped, separating white and green
  • 1/2 onion, sliced thinly
  • 1 Tbsp fish sauce
  • 1 pinch kosher salt
  • 1 pinch black pepper
  • 2 pinches sugar
  • cilantro

Instructions

  • Add a tablespoon of salt to the sliced bitter melon and mix it thoroughly so the salt covers the melon completely.
  • Cover and put the melon in the fridge for one hour. This is to make the melon less bitter and more crunchy.
  • Remove melon from fridge, rinse it with water, and squeeze all the water out of the melon.
  • Beat your eggs in a bowl and add a pinch of salt and pepper.
  • With the green onions, separate the white part from the green. 
  • Chop the green part for garnish and put aside.
  • Smash the white part of the onions and chop finely.  
  • In a pan, on medium high heat, sauté both onions for a couple of minutes until they’re fragrant.  
  • Add bitter melon to the pan.
  • Then add fish sauce, salt, pepper and sugar and stir fry for a few minutes. 
  • Push the bitter melon to one side of the pan.
  • Add eggs and scramble for 30 seconds.
  • When they’re just a little bit wet still, add the bitter melon with the eggs and fry until eggs are cooked, a few minutes.
  • Garnish with a few sprigs of cilantro and the chopped green part of the green onions. Serve with rice and enjoy!!
