Fish Dipping Sauce | Nuoc Cham

Ingredients 

  • 1 cup water
  • 2 cups organic coconut water
  • 1 cup white vinegar
  • 1 cup fish sauce, (can be substituted for vegan fish sauce)
  • 1 cup sugar
  • ¼ cup lime juice , with pulp
  • 2 limes, just their zest
  • 6 cloves garlic, chopped
  • ¼ cup Thai chili peppers, chopped
  • 1 Tbsp chili paste

Instructions

  • Boil water, coconut water, vinegar, fish sauce and sugar. Stir together and bring to a boil. Remove from heat.
  • Add lime juice, lime zest, garlic, chopped chili peppers and chili paste.

Notes

Good for a month in the fridge.
