Vietnamese Noodle Soups
I would probably dare to say that Vietnamese are known for their Noodle Soups. Where do I begin this list can go on and on and on as there are so many different variations whether you go to South Vietnam or Central or up North. You can’t talk about Vietnamese Noodle Soup without giving Pho an honorable mention, but if you ask me my favorite is Hu Tieu Mi Nam Vang.
My family often asks me to make noodle soup almost every weekend so I rotate them all out. They especially love the spicy kick that Bun Bo Hue brings but they also love the richness of the tomato broth in Bun Rieu.
If you have time, give one of these noodle soups a go and you won’t be disappointed! The portions are on the bigger side but if you’re slaving away for hours making a noodle soup broth then why cook a small portion? Save and freeze the broth if you can’t finish it!
