Vietnamese Vegetarian

I try to adapt my recipes to lean more towards Vegan than Vegetarian however there are just some dishes that require eggs (hence why they are in the Vegetarian section) such as Bun Rieu Chay and Vegetarian Pate Chaud and the ultimate show-stopper, my Vegetarian Fried Spring Rolls – Cha Gio Chay.
Going vegetarian is not hard to do when it comes to Vietnamese cooking as in most dishes you can substitute the meat with tofu and swap out the fish sauce with vegan fish sauce.
