Chinese Chicken Salad

Chinese chicken salad with citrus ginger dressing is a refreshing blend of crispy vegetables, tender rotisserie chicken, and zesty citrus flavors, creating a harmonious balance of sweet and tangy notes in every bite.

Ingredients 

Dressing:

  • ¼ cup olive oil
  • 2 Tbsp white vinegar
  • 2 Tbsp sesame oil
  • ½ Tbsp garlic, pressed
  • 1 ½ Tbsp brown sugar
  • 1 Tbsp hoisin sauce
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • cup preserved red ginger , minced
  • 2 Tbsp syrup from preserved red ginger
  • cup mandarin juice , from the can
  • ½ Tbsp sriracha
  • 1 Tbsp honey
  • 1 Tbsp sesame seeds

Ingredients:

  • 2 whole rotisserie chicken, deboned, shredded
  • 1 iceberg lettuce, thinly julienned
  • 1 head of romaine lettuce , thinly julienned
  • 1 head of gem lettuce , thinly julienned
  • 4 cucumbers, remove seeds, julienned
  • 3 carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 4 green onions, thinly sliced
  • 3 15 oz cans mandarin oranges, save juice for salad dressing
  • 2 cups spiral pasta, cooked
  • wonton wrappers, cut into strips and fried

Instructions

  • Combine all ingredients for the dressing and whisk together.
  • Combine all ingredients for the salad. Toss.
  • Pour dressing over and serve. How much dressing will be to your preference.
