Chinese Chicken Salad
Chinese chicken salad with citrus ginger dressing is a refreshing blend of crispy vegetables, tender rotisserie chicken, and zesty citrus flavors, creating a harmonious balance of sweet and tangy notes in every bite.
Ingredients
Dressing:
- ¼ cup olive oil
- 2 Tbsp white vinegar
- 2 Tbsp sesame oil
- ½ Tbsp garlic, pressed
- 1 ½ Tbsp brown sugar
- 1 Tbsp hoisin sauce
- ½ tsp kosher salt
- ½ tsp black pepper
- ⅔ cup preserved red ginger , minced
- 2 Tbsp syrup from preserved red ginger
- ⅓ cup mandarin juice , from the can
- ½ Tbsp sriracha
- 1 Tbsp honey
- 1 Tbsp sesame seeds
Ingredients:
- 2 whole rotisserie chicken, deboned, shredded
- 1 iceberg lettuce, thinly julienned
- 1 head of romaine lettuce , thinly julienned
- 1 head of gem lettuce , thinly julienned
- 4 cucumbers, remove seeds, julienned
- 3 carrots, julienned
- 1 red bell pepper, thinly sliced
- 4 green onions, thinly sliced
- 3 15 oz cans mandarin oranges, save juice for salad dressing
- 2 cups spiral pasta, cooked
- wonton wrappers, cut into strips and fried
Instructions
- Combine all ingredients for the dressing and whisk together.
- Combine all ingredients for the salad. Toss.
- Pour dressing over and serve. How much dressing will be to your preference.
