I stumbled upon this recipe years ago from Chef John, and as he promises, it’s almost guaranteed to have a perfectly smooth, crack-free top.
This is one of the easiest pies you’ll ever make. Honestly, I wouldn’t fuss over making a pie crust from scratch. Simply grab an unbaked pie crust from the frozen section of your supermarket, and voilà—everyone will think you spent hours on it!
Baking Tips:
I usually know the pie is done when the center is no longer jiggly or wet but sets firm. Keep a close eye on it toward the end of the baking time to ensure you don’t burn the crust. A little attention goes a long way in achieving that perfect golden finish.

Classic Pumpkin Pie
Ingredients
- 1 15 oz can pumpkin puree
- 3 egg yolks
- 1 large egg
- 1 14 oz can sweetened condensed milk
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp kosher salt
- ¼ tsp fresh nutmeg, grated
- ⅛ tsp Chinese 5-spice powder
- 1 9-inch unbaked pie crust
Instructions
- Preheat oven to 425 degrees.
- Whisk together pumpkin, egg yolks, and egg in a large bowl until smooth.
- Add sweetened condensed milk, cinnamon, ginger, salt, nutmeg, and Chinese 5-spice powder. Whisk until thoroughly combined.
- Pour filling into crust.
- Lightly tap on the counter to release air bubbles.
- Bake in oven for 15 minutes.
- IMPORTANT: Reduce heat to 350 degrees and bake until just set in the middle, 30-40 more minutes. You will know it is done when the middle of the pie is no longer runny and is firm to the touch.
- Allow to cool completely before serving.
