Vietnamese Fried Rice | Com Chien
Com Chien is a Vietnamese fried rice dish, cooked with eggs, Chinese sausage, peas and carrots, seasoned with soy sauce and aromatic spices. It's great on its own or accompanied with vegetables and/or a meat dish!
Ingredients
- 4 Chinese sausage, cut into small bite size pieces
- 2 Tbsp butter
- ¼ onion, sliced
- 6 green onion stalks, sliced thin, separating white and green (use green part for the garnish)
- 2 cloves garlic, chopped
- 6 cups cooked cold rice, preferably a day old rice, at least
- 1 cup peas and carrots, frozen
- 3 Tbsp Maggi, or soy sauce
- 2 Tbsp fish sauce
- 2 Tbsp sesame oil
- 2 Tbsp ketchup
- 4 eggs, beaten, seasoned with salt and black pepper
Instructions
- In a wok, on medium heat, cook Chinese sausage. You do not need to add oil since the Chinese sausage will release its own.
- Cook until it’s slightly brown, then add butter, onions, white part of green onions and garlic, and fry another minute until onions soften.
- Add rice to wok and break it with a spatula until it’s no longer in clumps.
- Add peas and carrots and mix it all together.
- Then add soy sauce and mix it all together.
- Finally add fish sauce, sesame oil and ketchup and mix it all together.
- Push rice to the side and pour in the beaten eggs. Let it cook until it’s almost dry but not completely.
- Then scramble and mix together with the rice.
- Stir fry the rice for another 5 minutes.
- Turn the heat off, garnish with green onions and serve!
