Stir-Fried Vegetables
Stir-Fried Vegetables are a colorful medley of fresh veggies quickly sautéed with onions, soy sauce, and a hint of fish sauce for a light, flavorful dish.
Ingredients
Ingredients:
- 1 whole onion, sliced
- 10 cups medley of vegetables, such as broccoli (cut into bite size pieces), cauliflower (cut into bite size pieces), green beans (cut into one inch pieces), sugar snap peas, carrots (sliced ¼ inch thick), or whatever vegetables you prefer
- ⅓ cup garlic chives, cut into one inch pieces (optional)
- 1/2 tsp kosher salt
- ½ tsp black pepper
- 1 tsp sugar
- 2 Tbsp mushroom powder
- 1 tsp garlic powder
- 1 Tbsp fish sauce, or substitute with vegan fish sauce
- 1 Tbsp Maggi, or soy sauce
Garnish:
- cilantro, chopped
- green onions, chopped
- Thai chili peppers (optional), chopped
Instructions
- On medium-high heat in a wok, add oil and fry sliced onion until they soften, around 2-3 minutes.
- Add medley of vegetables and garlic chives (if using).
- Then add salt, pepper, sugar, mushroom powder, garlic powder, fish sauce and Maggi/soy sauce.
- Stir fry for around 5 minutes until vegetables have softened.
- Garnish with chopped cilantro, green onions and chopped chili peppers (optional), and eat as a side dish or a main dish with rice.
