Ingredients
½cupyellow mustard
1lbbrown sugar
15lbs whole bone-in ham
Instructions
Preheat oven to 350 degrees.
In a bowl, mix yellow mustard and brown sugar until you have a thick paste.
Line baking pan with aluminum foil.
Place ham on foil and spread brown sugar/mustard paste on top and in all the crevices of the ham.
Fold and seal foil to completely cover the ham. Do not open again until ham is done.
Bake at 350 degrees for 20 minutes per pound.
Once done cooking, remove the foil and transfer the drippings from the roasting pan to a saucepan, making sure to strain with a sieve.
On medium heat, reduce the drippings by cooking it for 15 minutes.
Baste the sauce over the ham and in between the slices or set it aside in a gravy boat as a dipping sauce.
