Marinate prawns with all the marinade ingredients. Set aside.
In a large skillet, on medium high heat, add 1 Tbsp cooking oil and 2 Tbsp butter along with garlic and shallots. Cook for 30 seconds.
Add half of marinated prawns and cook for 5 minutes, turning them over halfway.
Add half lemon juice and 2 Tbsp of butter. Cook for another couple minutes until shrimp is cooked. Remove shrimp from pan and repeat then process. You will do this in two batches total.
I love adding a big dollop of cucumber tzatziki and squeezing lime on shrimp.
Serve immediately.
