A refreshing Mediterranean Tomato and Chickpea Salad, bursting with juicy tomatoes, hearty chickpeas, fresh herbs, and a zesty lemon dressing. Light, flavorful, and perfect for any meal!
Ingredients
Dressing:
1tspkosher salt
¼black pepper
¼cupextra virgin olive oil
1 ½whole lemon, juiced
¼cupground sumac
Ingredients:
2cupsRoma tomatoes, seeds removed, cut into 1/2 inch pieces
2cupsPersian cucumbers, seeds removed, cut in half lengthwise then in to 1/2 inch thick slices
¼red onion, cut in half then thinly sliced, soak in ice cold water
½cupmint leaves, chopped
½can chickpeas/garbanzo beans (15.5 ounce can), drained and rinsed
Instructions
Soak sliced red onions in an ice cold water bath for 30 minutes then drain.
Add all dressing ingredients together and set aside.
Prepare the rest of the ingredients.
Mix all ingredients together in a bowl and toss thoroughly.
