Ingredients
2bitter melons, cut in half lengthwise, remove seed including the white part then slice thin
1Tbspkosher salt
6eggs, beaten
2green onions, chopped, separating white and green
½onion, sliced thinly
1Tbspfish sauce
1pinchkosher salt
1pinchblack pepper
2pinchessugar
cilantro
Instructions
Add a tablespoon of salt to the sliced bitter melon and mix it thoroughly so the salt covers the melon completely.
Cover and put the melon in the fridge for one hour. This is to make the melon less bitter and more crunchy.
Remove melon from fridge, rinse it with water, and squeeze all the water out of the melon.
Beat your eggs in a bowl and add a pinch of salt and pepper.
With the green onions, separate the white part from the green.
Chop the green part for garnish and put aside.
Smash the white part of the onions and chop finely.
In a pan, on medium high heat, sauté both onions for a couple of minutes until they’re fragrant.
Add bitter melon to the pan.
Then add fish sauce, salt, pepper and sugar and stir fry for a few minutes.
Push the bitter melon to one side of the pan.
Add eggs and scramble for 30 seconds.
When they’re just a little bit wet still, add the bitter melon with the eggs and fry until eggs are cooked, a few minutes.
Garnish with a few sprigs of cilantro and the chopped green part of the green onions. Serve with rice and enjoy!!
