Stir Fry Dungeness Crab is a sumptuous dish featuring succulent crab meat cooked in a flavorful stir-fry sauce with shallots, green onions, and ginger, finished with butter for added richness.
Ingredients
5Dungeness crabs
⅓cupavocado oil, or any neutral oil
½cupshallots, sliced
⅓cupginger, sliced
4garlic cloves, smashed
1jalapeño, sliced (more if you like it spicier)
1tspsugar
2Tbspfish sauce
1Tbspmushroom powder
1 ½tspkosher salt
1tspblack pepper
½cupunsalted butter, preferably Beurre Bettel, otherwise any butter will do
½cuprau ram, roughly chopped (or cilantro or both)
5green onions, cut into one inch pieces
Instructions
To cook the crab humanely, put them in the freezer for an hour or two so they go to sleep.
Then steam crabs for 15 minutes by putting them in a hot steamer. You will want to steam them until almost done but not fully cooked.
Remove from steamer and let them cool.
Once done cooling, pull the shell off, remove the gills, and cut the crabs in half from top to bottom.
Then cut them in half again, so you have four crab pieces per crab.
In a wok, on medium high heat, add oil and once hot, add shallots, ginger, garlic, sliced jalapeños and stir fry for a couple of minutes.
Add sugar, fish sauce, mushroom powder, salt and pepper and mix together in the wok.
Add butter.
As soon as butter melts, add steamed crab pieces.
Mix sauce with the crab to coat it evenly for one minute.
Put lid over wok, reduce heat to medium, and let it steam for 5 minutes to finish cooking the crab.
Turn off the heat. Add rau ram and green onions, mix it in.
Transfer to a big bowl or plate and serve!
I like to dip the crabmeat in a lime dipping sauce consisting of fresh squeezed lime with salt and pepper. However, the crabmeat is so tasty, that this dipping sauce is not needed.
