Ingredients
5sweet potatoes, peeled and sliced, around 16 cups
½cuppacked brown sugar
¼cupunsalted butter
3Tbsporange juice
1pinchground cinnamon
124 oz baglarge marshmallows
Instructions
Preheat oven to 350 degrees.
In a steamer with boiling water, steam the sweet potatoes for 30 minutes.
Transfer steamed sweet potatoes to a bowl.
Add sugar, butter, orange juice and cinnamon.
Mix with an electric mixer until blended and pureed.
Spread evenly into a 9x13-inch baking dish. I found that it also fits in a 7x11-inch baking dish or any size in between the two.
Place marshmallows in a single layer over the mashed sweet potatoes.
Bake in the oven until marshmallows are slightly golden brown and melted. About 25-30 minutes.
