4Chinese sausage, cut into small bite size pieces
2Tbsp butter
¼onion, sliced
6green onion stalks, sliced thin, separating white and green (use green part for the garnish)
2clovesgarlic, chopped
6 cupscooked cold rice, preferably a day old rice, at least
1cuppeas and carrots, frozen
3TbspMaggi, or soy sauce
2Tbspfish sauce
2Tbspsesame oil
2Tbspketchup
4eggs, beaten, seasoned with salt and black pepper
Instructions
In a wok, on medium heat, cook Chinese sausage. You do not need to add oil since the Chinese sausage will release its own.
Cook until it’s slightly brown, then add butter, onions, white part of green onions and garlic, and fry another minute until onions soften.
Add rice to wok and break it with a spatula until it’s no longer in clumps.
Add peas and carrots and mix it all together.
Then add soy sauce and mix it all together.
Finally add fish sauce, sesame oil and ketchup and mix it all together.
Push rice to the side and pour in the beaten eggs. Let it cook until it’s almost dry but not completely.
Then scramble and mix together with the rice.
Stir fry the rice for another 5 minutes.
Turn the heat off, garnish with green onions and serve!
